Amsterdam to Bordeaux

We are a married couple from Colorado who will be leaving from Amsterdam mid August for a 5 week trip south along the coast. We plan to get to somewhere near La Rochelle and then take our bikes back to Paris on the train to fly home. We are looking for any coastal route suggestions ,thoughts on bike/gear security while camping or leaving the campsite, and hints for the train transfer. Any suggestions would be appreciated.
We would also like to find a few hosts near the coast to break up the camping and meet some locals. Please contact us if you may be able to accomodate us for a night. We plan to continue the trip around the coast on future visits and eventually get to Istanbul.

Greetings from Denver Colorado
You are hopefully already underway on your adventure and having the time of your life. I am planning a trip next June starting from Moscow, and making my way all over Europe for about a year. I would love to get your feedback on the routes you take and any suggestions you may have in regards to the regions you visit.
