Niagara to New York, any idea?

Hello! I am doing a coast to coast in the USA. I am now about two weeks in advance on the schedule.
Any idea on how to stretch the ride from Niagara to New York of about 500/1000 miles so that I can use the days I have left cycling around?

There's plenty of great
There's plenty of great cycling in New York State.
My first choice would be the Finger Lakes region. Ten lakes gouged out of the bedrock by the glaciers, run roughly parallel to one another. Each has its own character. Plenty of small towns, always one at each end of a lake. It's New York's wine country too, so if that's your fancy, you could spend months on wine tastings and tours.
You may want to follow the shore of Lake Ontario up to the 1,000 Islands. From there you could take a ferry to Kingston Ontario. (Bikes aren't allowed on the 1,000 Islands bridges.) Or, head east along the St. Lawrence, before heading south to NYC, possibly detouring through Vermont. A variation of that will take in the Adirondack mountains.
